Get Pancaking for National Pancake Week!fujimama
Get out your griddles and your spatulas and get ready for National Pancake Week! There is some disagreement over the exact dates of National Pancake Week. Some sources say it’s the last week of February. Other sources say it starts on March 1st this year and lasts through Mardi Gras (Fat Tuesday), the week leading up to Lent. Starting in the Middle Ages, meat, eggs, and dairy items were forbidden during Lent. Many sources site the practice of preparing for this period of abstinence by using up items in the pantry, such as eggs, milk, and butter, by making big batches of pancakes. In fact, in some countries Mardi Gras is also called Pancake Day, because of this tradition. IHOP is even getting in on the fun by giving every customer that comes in March 1, 2011 between 7a.m. and 10p.m. a complimentary short stack of pancakes.
Whether or not National Pancake Week is next week or the week after, I figure I’ll just start celebrating now to play it safe. I’ve pulled together a bunch of pancake recipes that will have you scrambling to use up all of the eggs, milk, and butter in your own house! I’m starting with a link for the amazing looking pancakes featured in the picture above. Best Buttermilk Pancakes (Jenny Rosenstratch, Feature on Babble.com) — A great basic buttermilk pancake recipe that Jenny claims is the best ever. I think I’ll have to try them out with that kind of endorsement! Jenny also shares 10 ways to “up the fun factor” for kids with these pancakes.

Light and Fluffy Lemon Pancakes (Pinch My Salt) — Light fluffy pancakes with a hint of lemon, dusted with powdered sugar and sprinkling of pomegranate arils. These look so refreshing and pretty. Perfect for spring!
Pumpkin Pancakes with Cinnamon Butter (raspberri cupcakes) — These pumpkin pancakes are a beautiful golden orange color (thank you pumpkin!) and topped with a luscious cinnamon butter. Yes please!
