Fresh spring strawberries deserve some special treatment. Flavors that enhance their natural deliciousness, but do not overwhelm their sweet and refreshing fruity flavor. Here is one of my favorite fruit salad recipes using fresh strawberries. These simple flavor accents will keep your berries perky and lively, yet sweet and cravable. Ginger Lemon Strawberry Salad
vegan, makes 2 cups
2 cups fresh strawberries, washed and sliced
1 tsp freshly grated ginger (use a microplane)
1/2 – 1 tsp fresh lemon zest
3 Tbsp fresh lemon juice
1-2 Tbsp grade B maple syrup
optional: dash of cayenne, chopped fresh mint or chopped fresh basil
Directions: Prep your berries and toss with the ingredients. Place in the fridge and allow to chill for at least 20 minutes. Serve chilled.
Yum idea: add diced avocado for a savory accent to this salad. Strawberries and avocado are a delicious combination!
