Well what if I told you that two talented bloggers spent the past few years of their lives going through the Betty Crocker recipes and crafting a vegan version of each and every recipe. Crazy, right? Well Annie and Dan Shannon, of Meet the Shannons, didn’t think it was that crazy, and that is why they wrote the brand new cookbook, Betty Goes Vegan: 500 Classic Recipes for the Modern Family.     I grew up going to Sunday Dinner at my Grandmother’s every week. She was an amazing cook! If there was one meal that she used to make that I would love to veganize it would be the following.

    Homemade Chicken and Dumplings with Tators and Green Beans on the side, and Buttermilk Cake for dessert!

    My grandmother had a potato casserole that we had at every holiday dinner. Potatoes with cream cheese and cheddar and onions and a cripsy topping made from corn flakes. Mmm…my best friend used to call it “heart attack casserole!”

    Oh my! I’ve been plant-based for almost a year and have forgotten what my old lifestyle even tastes like. What could it be? Scalloped potatoes? no. Wings? no. Lasagna? no. What do I miss the most? Hot dogs? Yes. I miss one of those in the park on a summer’s day. Horrible food but charbroiled…yum. I guess that’s not a food food.     Anything with seafood! My mother makes the best seafood pasta and I LOVE cioppino. I don’t know if this would ever be possible, but am willing to experiment if anyone has any ideas! I love seafood and my boyfriend is Swedish and basically lives off of it, so this is the main reason I cannot go totally vegan!

    I would love a vegan version of my childhood birthday cake request — hidden treasure cake. It was probably from a church lady cookbook, and it was basically a chocolate cake with a cream cheese batter poured on it and swirled. (It might have actually been a cupcake recipe for chocolate cupcakes with a dollop of cream cheese added to each.). It was the best and I can’t find the original recipe anymore.

    I would like to see a veganized forgotten cookie. It is meringue cookie with nuts and choc chips in it. You spoon them on a foil lined cookie sheet put into 300 degree oven and then shut the oven off and leave them sit in there until oven cools.

    I feel like I’ve managed, with the help of a lot of cookbooks and blogs, to veganize most of my favorite classic meals. I guess I’d have to second stroganoff, a recipe that would nail the creaminess and savoriness, and chicken fried steak-thankfully enough I can get an awesome vegan version of that at the Chicago Diner!

    I would LOVE a classic recipe for lasagna!!! I am a runner who is starting to explore vegan foods and recipes. I would love this book! I have an old Betty Crocker cookbook that I used to love. These days I have to alter almost every recipe so that it’s healthy for my lifestyle.
