Gluten-Free Gingerbread Men

I’ll admit it. I am about the least crafty person around, so the decoration here is pretty shabby. In fact, when my husband saw this photo on top, he immediately started laughing and said, “That one on the left looks like your dad.” That wasn’t my intention.

You are probably better at decorating gingerbread men than I am. Yours can look far more polished and less like my dad.

Luckily, our daughter doesn’t care what these look like. When I first handed her one of these, she said, “Gingerbread baby!” And then she licked off the frosting buttons and ate the cookie. “Hmmmm…tastes delicious!”

Next batch I just slathered the cookies in royal icing. Okay, so it looks like they fell face forward into a snowdrift. What can I say? I’m so not crafty.

However, now I can make gingerbread babies for our daughter. This recipe, adapted from Melissa Clark, is warm with spices and wonderfully crunchy when baked. We make them every year now. So can you.
