Do you have a penchant for pumpkin cookies? Now you can get your autumn cravings met in a big way, because we’ve gone and made these pumpkin cookies gluten-free, honey-sweetened, and paelo-friendly. Better yet, they’re so good, my kids didn’t even know they’d been made different from the usual high sugar, white flour batch of cookies! “Mom, I LOVE you’re pumpkin cookies” was the rave review of one daughter, her mouth full of a big, gooey bite. I just patted her on the head and kissed her, “And I love you, my little pumpkin.”

Almond Flour, Gluten-Free, Paleo-Friendly Pumpkin Cookies

  • 1 1/2 cups almond flour
  • 1 egg
  • 4 tablespoons honey
  • 1/2 cup pumpkin puree
  • 2 tablespoons butter, melted
  • 1 tablespoon pumpkin pie spice
  • 1/2 teaspoon baking powder
  • pinch salt
  • 1 cup mini chocolate chips

Preheat oven to 350 degrees. Whisk all ingredients together in a large bowl until well mixed. Spoon dollops of the batter onto a parchment-lined baking sheet. Bake for 10-14 minutes, or until the cookies have set. Cool slightly before serving.
