Grandma Beulahs Rice Pancakes From Leftover Chinese Takeout

I’m going to let you in on a little secret: every Friday we order take-out. By the time Friday gets here, my husband and I are both exhausted, so we made it a family tradition to order take-out for an end-of-the-week treat. It’s a much-needed break that gets us all excited. This past week we chose Chinese and there was a ton of rice leftover, but you all know how gross take-out rice is the following day. I didn’t want to waste it, but wasn’t sure how to use it. That’s when I discovered a pancake recipe using leftover rice. What perfect timing, as Saturdays are pancake breakfast day! These pancakes make us want to order Chinese every Friday.
