This simple grilled cheese sandwich is the prima donna of all grilled cheese. It’s crispy and buttery on the outside, full of the fresh flavors of pesto, and baked to perfection with melted italian cheeses. I made my own pesto sauce with a bit of black truffle oil in place of the standard olive oil, but you can use premade pesto, if you’d prefer.
Grilled cheese is the perfect answer for a gloomy winter day, a quick girlfriend lunch, or a spontaneous picnic under the kitchen with your kiddos. It’s just easy, tasty, and generally rock-your-socks-off amazing. Of course, when you serve it as we have here, with all of these rich, wondrous flavors wrapped in a single hunk of bread. Why, the perfect sandwich is elevated to something far beyond that.
Pesto Grilled Cheese
- 2 tablespoons pesto sauce (try making this recipe homemade with a drizzle of Black Truffle Oil in place of the olive oil)
- 2/3 cup Italian blend cheese
- 1 tablespoon butter
- 2 slices of hearty, good quality bread (sliced fairly thin)
Preheat a skillet over medium heat. Spread the butter on one side of a slice of the bread. Place the bread buttered side down into the skillet. Spread the pesto on top of the bread, then place the cheese on top of the pesto. Top with a second slice of buttered bread (butter side up), then cover the pan with a lid and allow it to cook until the cheese is melted. Remove the lid, flip the sandwich and allow to cook until crispy and golden brown. Serve immediately with fresh sliced tomatoes on the side. Enjoy!
