Grincherbread Cookies

Looking for a fun way to celebrate Suess’s birthday? Try these delicious Grincherbread cookies. Rich with the flavor of gingerbread, raisins, and white chocolate chips, this simple recipe will bring back all the fun of Christmassing with Dr. Suess in that classic tale, The Grinch That Stole Christmas. Serve with green milk for extra fun!

Gincherbread Cookies

1/2 cup of butter
1 cup brown sugar
2 eggs
1 tablespoon pumpkin pie spice
1 teaspoon dried ginger powder
2 Tbs. molasses
1 tsp. baking powder
2 1/2 cups of flour
1/2 cup raisins
2 cups white chips (NOTE: for extra Grinchy-ness, chop up 1 cup of green candy melts and toss those into your batter, instead!)

Preheat oven to 350 degrees. In a large bowl, beat butter, brown sugar and eggs until light and fluffy. Add remaining ingredients and mix well. Drop dough by the tablespoons on to an ungreased cookie sheet. Bake for 8-10 minutes, or until cookies are barely browned around the edges. Cool. Enjoy with a chilly glass of green milk.
