Is it me or did everyone’s moms make rum balls when they were a kid? I always remember my mom making these little round ‘cookies’ for her friends at Christmas time and of course they were the one cookie I wasn’t allowed to try. I understand now.
The last couple of years, I’ve made made big batches of these potent little grown up treats for coworkers, family and friends…but with bourbon. They are easy to make, and package up very nicely in mini muffin liners and in a festive tin….perfect for gift giving. But make sure you keep them away from the kiddos!
Recipe slightly adapted from Southern Living Best Loved Cookies
1 (12-oz.) package vanilla wafers, finely crushed
1 cup chopped pecans or walnuts
3/4 cup powdered sugar
2 tablespoons cocoa
2 1/2 tablespoons light corn syrup
1/2 cup bourbon (or light rum)
1/2 teaspoon vanilla
1. Combine vanilla wafers, pecans, powdered sugar, and cocoa in a large bowl; stir well.
2. Combine corn syrup and bourbon, stirring well. Pour bourbon mixture over wafer mixture; stir until blended. Shape into 1-inch balls; roll in additional powdered sugar. Store in an airtight container up to 2 weeks.
