The more I get into My Father’s Daughter the more I am drawn to the great side dish recipes. They are easy, healthy and fun to make. I often find myself so occupied with the main course that side dishes come second when cooking. This time I decided to try the recipe for avocados with Bruce’s Dip. My husband and I were in the mood for a light meal so we decided to have these as part of our vegetarian meatless monday. We loved the way the tangy dip complemented the creamy avocado. I could’ve done without the capers, but that is just me. I am not a big fan of them, though Gwyneth seems to love using them. All in all this turned out to be a great side dish everyone adored.
Bruce Paltrow’s Dip with Avocados
adapted from My Father’s Daughter
1 cup mayonnaise or Veganaise
1/2 cup sour cream
2 tablespoons chopped parsley
1/2 teaspoon Dijon mustard
2 scallions, finely sliced
1 clove garlic, minced
1/2 teaspoon fresh lemon juice
Pinch of salt and pepper
1 tablespoon capers (optional, in my book)
1 pinch celery seeds
Mix everything together and serve over avocado halves!
