This past week I had a great experience cooking on a whim from My Father’s Daughter. Usually I pick out recipes to try, this time I had a ton of fresh berries on hand and needed something to make for dessert before they went bad. Remembering that Gwyneth’s book had a few berry recipes between the breakfast and dessert chapters I leafed through it until I landed on this recipe. Juicy summer berries are bathed in sweet cream then briefly caramelized in the oven. It is so incredibly simple I found myself wondering why I had never thought of it before. The perfect summer dessert, indeed.
Berries with Caramelized Cream
adapted from My Father’s Daughter
2 pints berries
2 tablespoons sour cream
2 tablespoons heavy cream
1 large egg
1 egg white from a large egg
1 cup mascarpone cheese
3 tablespoons powdered sugar
Pinch of fine sea salt
Seeds of one vanilla bean or 1 teaspoon vanilla extract.
1. Turn your broiler on high and distribute the berries evenly in a 9-inch pie plate. Whip together the remaining ingredients until the creamy is completely smooth and slightly thickened.
2. Pour the cream into the pie plate and place it under the broiler for about 5 to 10 minutes. The top will bubble and set and the berries will shrivel and pop. The entire plate of cream will not be set, so be careful when you remove it from the oven. The topping should be lightly browned. Serve with a spoon.
