Halloween Nachos

Last week I took out my Halloween shaped cookie cutters with cookies in mind however, once I noticed the tortilla wraps in the fridge, I was inspired to put the cookie cutters to use in a more creative way.

Although these take a bit more time than a simple wedge shape, the result is much more fun….

The kids had a blast using the cookie cutters on the flatout bread we usually use for sandwiches and had fun using olives and scallions to decorate. You can also use chives to make the mouth or even eyebrows.

Ingredients (yield varies based on size of cookie cutters):
3 Multi-grain Flatout (or any type) tortillas
Cookie Cutters
Shredded Cheese of choice (recommend monterey jack or cheddar)
Sliced Olives
Sliced Scallions

Preheat the oven to 350 degrees F.  Using a cookie cutter, cut the tortilla into shapes and place them in a single layer on a cookie sheet.  Bake for 5 minutes, flip the wedges over and bake another 5 minutes. Remove the tortillas from the oven and place a thin layer of salsa on them, followed by the cheese. You can either decorate the faces now and then bake or bake them for 2-3 minutes until the cheese melts and then decorate the nachos.
