Happiness on a Plate: Strawberry Sunshine Pancakes

Sunshine PancakesDo you remember that film 13 Going on 30? It was a cute little chick-flick (teen chick-flick?) and in the story Jenna, the main character, eats pancakes. Sure, a lot of people eat pancakes in movies, but these were different. She was in the middle of her teenager-caught-in-woman’s-body thing and all she wanted was her Mom’s pancakes with strawberries to comfort her. I loved the way the sliced strawberries were placed just so around the pancakes, making it look like a stack of sunshine. They were sweet, tempting and comforting all at once. The other day my daughter was a having a tough morning so I set out to make her a special breakfast and strawberry sunshine pancakes seemed like just the thing.

I first made a few pancakes using my Homemade Pancake mix. Then, I thawed a jar of my frozen sliced strawberries and set them around the edge of the cakes. They were sweet, delicious and just the thing to perk up my little one. It was happiness on a plate.
