Harry Potter Challenge. It’s hard for me to resist a challenge. Especially when it comes from a sweet girl simply requesting some lovely vegan Harry Potter cupcakes in celebration of the upcoming film: Harry Potter and the Deathly Hallows Part Two. Though I have not seen all the HP movies – I do love the series and what it represents. Plus all the magic wand toting, circle glasses wearing fans simply warm my heart. Harry Potter books made reading cool again.
When the first HP book came out, I was in college and working at a Summer Camp. I’d watch these tiny kids carry in books the size of their heads. They’d sit quietly and read. Their arms folded calmly in front of them. All 700, 800+ pages in those heavy rustic books. I’d ask them what it was about and they’d say “You have to read it!” It’s so true. Sometimes you simply have to immerse yourself in a book to truly explore the other world it offers. And for kids to appreciate that lesson at such a young age is remarkable – dare I say, magical.
So this recipe is for all the HP fans out there. And OK, even for anyone who loves a good owl cake..
Easy Owl Cake. For my Harry Potter creation – I decided to make Hedwig the star simply because he is so gosh darn cute. Fluffy white feathers and wise owl eyes. But I wanted to do a minimalist Hedwig. Super easy. Something anyone could actually recreate in a jiffy. Easy owl design – yet still oozing with cute fluffy owl personality. As I finished up my cake, I really couldn’t take my eyes off this little guy.
I made my cake vegan by using my vegan chocolate cake recipe below and my vegan cream cheese frosting recipe.
Hedwig Owl Cake
2 layers cake – 2 9″ rounds of chocolate cake (vegan recipe below)
frosting – 2 cups of cream cheese frosting
feathered wings – 1 cup slivered almonds (skinless)
eyes – 1 lemon slice, thinly sliced – remove seeds
top of head and eye pupils – 1/3 cup dark chocolate chips
feet and beak – 3 large raw cashews

Vegan Chocolate Cake Recipe

To make: mix and bake as you would any chocolate cake. Bake at 350 degrees for about 30-35 minutes.
makes 2 9″ rounds
2 3/4 cups pastry flour
3/4 cup unsweetened cocoa powder
1 1/4 cups sugar
1/2 cup maple or agave syrup
1 Tbsp baking powder
1 Tbsp baking soda
1 Tbsp vinegar
1 tsp salt
1/2 cup soy milk
1 1/2 cups water
1/2 cup applesauce
1/2 cup vegetable oil
1 shot of espresso
4 Tbsp Ener-G Egg Replacer + water to activate
