Let’s talk about lentils. I eat lentil soup like my Spinach, Tomato and Lentil Soup and my more traditional family recipe pretty often. Lentils are a legume, they are low in calories, hearty and a great source of protein, as well as fiber and folate. A lot of people who are looking to incorporate more meatless meals into their diets look to lentils to use as a way to bulk up a recipe, such as chili or even a vegetarian sloppy joe. I love experimenting with recipes that feature this super food and definitely enjoy the health benefits that go along with them.
