Need an easygoing and tasty (but also healthy) muffin recipe? Of course you do! Our simple recipe is made with healthy ingredients like whole wheat flour, banana, and kefir. It’s moist and flavorful, and best of all it’s pretty healthy. Feel free to vary the recipe, subbing in berries, dried fruit, or yogurt.
Whole Wheat Banana Muffins (adapted from The New York Times)
1/2 cup butter, melted and cooled
2 1/2 cups whole wheat pastry flour
2 tablespoons baking powder
1 teaspoon sea salt, plus more for topping
1/2 cup sugar, plus more for topping
1 cup mashed banana
1/2 cup kefir or yogurt mixed milk
1/2 teaspoon allspice
1 teaspoon ground ginger
Preheat oven to 375 degrees. Line a 12 cup muffin tin with paper liners.
Combine the flour, baking powder, and salt and set aside.
In a large bowl, stir the sugar and the butter together until combined. Add the banana, egg, kefir, and spices. Fold in the flour mixture and stir just until combined.
Sprinkle the top of each muffin with a few big pinches of sugar and a pinch of salt.
Spoon batter into the prepared muffin tin, so that each cup is almost full. Bake for about 30 minutes, or until the tops are golden and a toothpick inserted in the center comes out with just a few crumbs.
