    The bean soup looks wonderful! I’m excited to try these recipes.

    We go through a ton of kale with green smoothies. For three smoothies I blend: 1 large glass of water, 2 bananas, half a bunch of de-boned kale, a large handful of blueberries and if I have them an orange, carrot, apple, mango and/or peaches. You can use other berries and really whatever you have in the house. My three year old has been happily drinking these since she was about 10 months. My husband and I love them too.

    I made this saturday night (kale salad with parmesan and cranberries) for a dinner party and it was delicious. I didn’t cut the ribbons quite as narrow and couldn’t get parmesan flakes as large so it was less pretty than the above, but a great choice. I feel like I am rediscovering kale.
