Healthy, Happy Sunday Morning Waffle Breakfast

How is this for a happy (and healthy) Sunday morning breakfast? Vegan blueberry waffles studded with healthy ingredients like oats, citrus and omega-3 rich flax seeds. Serve alongside some fresh squeezed pink grapefruit juice (for your antioxidant boost of vitamin C) – a few juicy sweet blueberries on the side. Or serve with a tasty spring green fruit salad with mint, kiwis, avocado and pistachio nuts.

And for mom and dad, a steamy soy latte or maybe a decadent Coconut Whippuccino made from rich espresso and vanilla bean coconut cream. Pile on the plates, grab some colorful spring napkins and drizzle some maple syrup to have yourself a cozy, happy morning. Get the recipes!..
