I’ve been really trying to come up with new ideas for lunch other than my usual sandwich or salad. Don’t get me wrong, I’m more than happy with either of those things, but every now and then I need to change things up…and since eating light and healthy is a priority to me right now, it can be pretty challenging at times. Do you ever get stuck in a “lunch rut”?
These tasty tuna wraps have become a regular in the lunch rotation lately and even made for a quick dinner one evening. You could easily use chicken or hard boiled eggs to change up your salad filling, and include more vegetables by adding finely diced onions or celery. I have swapped mayo out for a few key ingredients (Greek yogurt, mustard and lemon pepper seasoning) to make the tuna salad super flavorful yet still light on the calories. You can’t help but feel good after a power lunch like this.
