One thing most every kid has in common is a love of dunking things – most notably one food into another. Fries and ketchup, veggies and dip… the best way to get mine to eat fresh veggies is to add a tiny dish of dressing alongside for him to dip them into. Fortunately, creamy ranch dressing is simple to make from scratch; I like using low fat yogurt and if I have them, fresh herbs to make a far more delicious version than what comes in a bottle.
Creamy Yogurt Ranch Dressing
Adapted from Food Network
1/2 cup plain Greek yogurt
1/3 cup buttermilk
3 Tbsp. regular or light mayonnaise
2 tsp. lemon juice
1 tsp. grainy mustard
1 garlic clove, finely crushed
1 Tbsp. finely chopped fresh basil or parsley
1 Tbsp. finely chopped fresh chives
salt and pepper to taste
Whisk everything together until smooth and refrigerate until needed. Makes about 1 cup.
