These Herbed Cheezy Savory Waffles filled with herbs and cheese are my answer to my midnight waffle craving. Or maybe just my “breakfast for dinner” craving. I make these savory waffles the same way I would sweet breakfast waffles – only I reduce the sugar and pile in the savory ingredients. Think of them as biscuit-flavored waffles. These savory waffles can really be served along side and dinner – or brunch feast. They creatively take the place of bread, rolls, biscuits or toast. Savory Waffles: Herbs and Cheese
vegan, makes about 8 small waffles

1 3/4 cups flour
1/4 cup grape seed oil
1 tsp baking powder
1 Tbsp cider vinegar
3 Tbsp Ener-G Egg Replacer + water to activate
1/2 cup soy milk
1/2 cup water + add a few more Tbsp water as needed
1/2 cup vegan cheddar cheese
1/2 tsp salt
1/4 tsp black pepper
2 Tbsp dried parsley flakes
2 Tbsp mixed herb blend – or use freshly chopped herbs (about 1/3 cup)
1/2 cup onion, diced
2 Tbsp nutritional yeast (optional)

Hand mix all ingredients in a large mixing bowl.
Use waffle maker to cook.
Serve warm and crispy on the outside – chewy on inside.
