The other day I picked up a bag of delicious pita chips at Trader Joe’s. When I went back the next day for another bag they were being restocked so I bought a stack of pitas instead and decided to try and make them myself. My goal was to replicate the delicious pita chips I had bought originally. I even cut them up into rectangles just like the Trader Joe’s version, I find them easier to eat than the pizza-slice cut like other kind of pita chips on store shelves. After some research I came up with a simple recipe that yielded the results I wanted. The chips were saltty and crispy, but not too dry. They were perfect with a delicious sour cream dip, but my daughter liked them one their own.
Homemade Parmesan Garlic Pita Chips
Freshly grated Parmesan cheese
1 tablespoon finely chopped freshly parsley
1. Preheat the oven to 375ºF. Split open the pitas and brush both sides of each pita lightly with olive oil. Then, sprinkle the rough side of the pita with two pinches of garlic powder. Follow this with two pinches of freshly grated Parmesan cheese and 1 pinch of the chopped parsley.
2. Use a pizza cutter or sharp knife to cut the pitas into rectangles approximately 2inches high and 1 inch wide. Place the pita pieces rough side up on a lined cookie sheet and bake for 8 to 10 minutes. Be sure to check on this while they bake, they turn brown and crispy quite quickly.
