It’s that old familiar smell of fried pasta and onions smothered in tomato sauce and broth that can recreate childhood meal time for me. Sopa de Fideo (Fideo soup) is an old standard amongst Latin children and adults alike. It’s the dish you reach for on a cold day and want to get something on the table fast, something you know your child will eat. My Mother still makes Fideo for herself when the weather is chilly and she feels like revisiting the days of her youth. For being such a traditional dish it is rarely found at restaurants but could be found in almost any Mexican home. Here is a quick video on how to do it in your home.
Ingredients for Fideo:
- 1 – tablespoon vegetable oil
- 1 – cup fideo
- 1/2 – onion sliced
- 1 – tablespoon minced garlic
- 8 – ounces tomato sauce
- 2 1/2 – cups chicken or vegetable broth
- salt and pepper to taste
