As I walked through the door of the airport and out to the car this evening I was hit by a blast of warm air in the face. It was nice to see the humidity wanted to hang around and wait for me while I was gone. With the weatherman predicting “sweat”, I can’t bring myself to face the reality that summer is coming to a close and the back-to-school season is upon us. Instead, I’ll be whipping up a batch of ice cream, soaking my toes in the kiddie pool and enjoying the screams of my children for just a bit longer.

Miss Amanda from Kevin and Amanda posted this recipe to make ice cream without a machine last year, and it’s a keeper. Ice Cream Without an Ice Cream Machine
2 cups heavy cream
1 14-ounce can sweetened condensed milk
your favorite flavoring (1 teaspoon vanilla extract for regular vanilla ice cream)
Strawberry Cheesecake Ice Cream
mix into the sweetened condensed milk:
1/4 cup cream cheese, softened
1/2 cup crushed graham crackers
3 tablespoons strawberry preserves
1/2 teaspoon vanilla extract
Whip the heavy cream until still peaks form. Mix sweetened condensed milk and your flavorings together in a separate bowl. Fold in the whipped cream, pour into a sealed container and freeze until stiff. Scoop and enjoy!
