I had the most delicious salad at a dinner party I went to the other night (sans camera or else you’d see it for yourself). My host called it her Impossibly Green Salad. I know what you are thinking — what worse way to sell something to a troop of green-o-thropes known more commonly as your offspring? I haven’t solved that one, yet. But I do know that a group of cold blanched green vegetables (green beans, peas, asparagus, raw sugar snaps for crunch) all tossed with a basily pesto is just about the freshest, healthiest looking thing you’ve ever seen. So good I recreated it at my dinner table a few days later. The kids ate it — sans pesto — but they ate it.
