In Season: Tomatoes

Tomatoes are at their ripe, flavorful peak, weighing down their stalks in their pots behind my house, overflowing farmers’ market stands, begging to be turned into dishes while they really shine. While tomatoes are deliciously cheap and abundant, here are a few new uses for them, whether they’re destined for your dinner table or the pantry shelf to enjoy during the dead of winter. (And don’t forget that simple and most delicious of all tomato dishes – the sandwich, on good bread with thick peppered bacon.)
