Well folks, it looks like may 21st is Judgement Day – and all I can think about is my last meal. Shall I indulge in desserts? Fried foods? Or my mom’s famous home-style cooking? Check out what I’d dive into if indeed Judgement Day is upon us. Eat now or forever hold your cravings!.
Is the May 21st hoopla real? Are we really just hours away from the end of the world? And why do I have REM’s “It’s the end of the world as we know it, and I feel fine..” song repeating in my head?
..Hmm.. My gut says no – but my gut is also saying, “Kathy, if they world does end on Saturday, you’d better at least have an amazing meal!”
“..actually, I think I’ll skip a big meal, and dive into Judgement Day Desserts!”
So here is my ideal Last (Vegan) Meal Dessert Platter for Judgement Day 2011. Because no one wants to go down saying, darn it, I should’ve had that second slice of pie!!..
To Start.. I’ll need a smoothie – because they are indeed my fave. So for breakfast I’ll gulp down my Citrus Smoothie – maybe a side of my favorite Tofu Scramble – lotsa vegan butter slathered on my side of toast.
And then after my heavenly smoothie – maybe some sort of “real food” before my dessert bonanza..

…because even though the world is ending, I’m still going down vegan-style. Vegan dessert style.
