Kale, Cranberry and Goat Cheese Salad with Meyer Lemon Vinaigrette

I fell in love with kale salads early last year when a blogger friend mentioned on twitter she was making one dressed in a lemony ceasar vinaigrette topped with parmesan and a poached egg. Just writing those words give me a craving for it…and yes, I am aware that admitting this might make me sound a bit weird. For whatever reason, I just love kale. I try to cook it at least once a week, sometimes stewed or sauteed, sometimes in pasta sauce and sometimes in salad like this.

If you can still get your hands on some meyer lemons then I highly recommend that you scoop them up and make this bright and tangy vinaigrette that pairs perfectly with earthy kale, sweet cranberries and creamy goat cheese…and let’s not forget some crunch from toasted walnuts.
