Looking for an exciting sandwich to serve for lunch or even brunch? Well this Maple Tamari Tempeh and Kale Sandwich with a slathering of wasabi cilantro vegan mayo and a layer of crispy cheesy hash browns is far from boring! Rich and flavorful and filled with nutrients. It’s the hearty sandwich that you can feel good about. So if you are just not in a salad mood, grab a greens-infused sandwich.

This Kale Sandwich would also be delicious served as a wrap. So grab that bowl of leftover kale or steam up a new batch for a super green sandwich that gives your healthy salad some competition!..

Salad or Sandwich? Sometimes I’m just not in the mood for a salad. And with a bowl of leftover Spicy Peanut Kale in my fridge for lunch, I wanted to figure out a new way to serve this yummy dish. I remembered a sandwich I had once from a food truck. It was a thick roll stuffed with sautéed kale and a slice of savory sweet tempeh – all blackened and sticky. It was unreal. Amazing. And the genius in that sandwich was that the chef stuck a huge pile of kale between bread. A Kale Sandwich! And since kale is a hot veggie right now, the more ways to serve it the better, right?

Why the Hash Browns? I wated to make this sandwich for brunch. So I chose to use the oddball sandwich filling of hash browns. You can add in whatever topping you’d like though. Kale and temeh meshes well with plenty of flavors.

Kale Sandwich with tamari maple tempeh

Layer sandwich with:
2 slices toasted grain bread
1 cup Peanut Kale Salad, chilled
1 slice sauteed crispy tempeh
a layer of cheesy hash browns
1 tbsp wasabi cilatro mayo (see below)

Wasabi Cilantro Mayo
1 Tbsp vegan mayo (Vegenaise)
1 tsp powdered wasabi
1/2 tsp maple syrup
