Once you become a parent, the subject of food never goes away. Having to provide three meals and one to two snacks a day, what to eat is constantly on a mother’s mind. Just figuring out what to make your kids is hard enough. Factor in trying to navigate each child’s unique and ever-changing relationship with food and it can drive even the most level-headed mom or dad crazy. After years of experience with my own little ones and talking to thousands of parents and their own children, I have developed tips, strategies, and ideas that will make moms look forward to preparing their child’s food — and inspire the pickiest little eaters to get excited about the meals to come.
When you make something for your family and they like it, that’s a huge accomplishment. You will be able to make these meals and have the satisfaction of hearing, “That’s awesome, Mom.”
When I first had this recipe recommended to me, I was appalled — it sounded so gross! But I’m never one to shy away from giving an idea a whirl, so I decided to whip up a batch of my own. I wasn’t exactly sure how my kids would react when they first saw green peas in ice pop form, and I didn’t have huge expectations. But I guess the mere idea of peas on a stick was hilarious to them, because they were fascinated, as many of their friends have been when they’ve come over and tried them. Just goes to show that you can’t impose your own thoughts on what you think your kids will and won’t like. For all the parents out there who can’t get their little ones to try a green vegetable, give these a try!
I’ve received countless emails from moms asking if I have a recipe similar to the boxed veggie nuggets available at the grocery store. Finally, I broke down and bought some to see what all the fuss was about. Although labeled “all natural,” the boxed nuggets contain tons of fillers that are totally unnatural in my eyes, so I decided to come up with my own version. Not only are these nuggets out-of-this-world delicious, they’re super easy to make, and this recipe makes five times the number you get in a $5 box from the store. That’s a $20 savings right there! Just pop what you don’t use into labeled freezer bags and you’re all set.
This is a scrumptious eat-with-your-hands recipe that’s great for all ages but especially for all those little ones yet to have teeth. The inspiration for this came from the many conversations I had with parents whose 12-, 13-, or even 14-month-olds were still toothless. They really wanted to move their tykes beyond purees but needed a recipe soft enough for them to chew (or gum). Popeye would be proud of this recipe. Packed with spinach and creamy ricotta, these little morsels are like delicate soft pillows and so easy to make. You can serve them with a little red sauce, but for easier cleanup, I highly recommend just a little sprinkle of Parmesan, and that’s it!
