Leftover Chicken? Make an Easy Chicken Caesar Salad!

Chicken Caesar SaladI wrote about jerk chicken yesterday, and today I am writing about the delicious Chicken Caesar salad I made with the leftover chicken from that dinner. A salad is a great way to use up leftover chicken. Salads can be made any number of ways with all kinds of ingredients. In this case I made a semi-classic Caesar salad with a homemade dressing and jerk chicken. I found the flavor of the jerk chicken to be pair quite well with the salad dressing, I wasn’t sure that was going to be the case since the jerk chicken is so strongly flavored. It turned out to be a delightful meal made with leftovers. Next time I think I might make it into a wrap!

Leftover Chicken Caesar Salad

Leftover chicken cut into cubes

1 anchovy, finely chopped

3 tablespoons Parmesan cheese

2 tablespoons mayo

2 teaspoons fresh lemon juice

1 teaspoon Dijon mustard

1 garlic clove, minced

1/2 teaspoon Worcestershire sauce

1/4 cup olive oil

1 head Romaine lettuce, washed and finely chopped

1 cup croutons

1. Add the anchovy, Parmesan cheese, mayo, lemon juice, mustard, garlic and Worcestershire sauce to a bowl and stir together. Gradually whisk in 1/4 cup of the olive oil, whisking until the dressing is emulsified.

2. Place the chopped lettuce in a bowl and toss it with the dressing, cubed chicken and croutons. Serve!
