One of my all time favorite stir fry dishes is basil lime beef. I first had it a local Thai restaurant several years back, and have been making it pretty often ever since. It’s the perfect simple and quick stir fry that’s a little different. I love it because I can use regular basil if I don’t won’t to make a trip down to the Asian market, and if I do, I can also use Thai basil. Both work equally well.
This morning in my inbox, I saw a this beautiful green and gold stir fry with basil and lemon. This dish was vegetarian, but it suddenly occurred to me I had to try the same concept of basil lime beef, but with lemon, basil and chicken. It turned out wonderfully. The combination of lemon, chicken and basil in a stir fry is delicious. I added the same vegetables as I saw in the green and gold stir fry – broccoli and yellow squash. It’s bright and colorful, and the perfect springtime dish.
Lemon Basil Chicken Stir Fry with Squash and Broccoli
1 lb chicken, chopped in small pieces
1 large head of broccoli, chopped
4 – 5 yellow squash, chopped
1 medium sweet onion, chopped
1 lemon, cut in wedges
a small handful of basil, roughly chopped
salt and pepper
Cooked white rice
1. Cook rice according to package instructions. Preheat a large skillet. Drizzle with vegetable oil. Add chicken and salt and pepper. Stir fry until done.
2. Add vegetables and lemon and cook until tender crisp. After vegetables are done, remove from heat and add basil. Serve over white rice.
