Lemon Cream Cheese Cookie Sandwiches

There are oodles of fun and adorable baking projects to be done during the holidays. Don’t get me wrong, I love cooking up something cute with my kids. The process is often as great as the result. But sometimes the process can be stressful, especially during the rush of the holiday season, and a quick and easy baking recipe is just what my kids and I need.

These lemon cream cheese cookie sandwiches taste completely homemade and take only a few minutes to prepare. The cream cheese gives them a nice richness while the lemon keeps the flavor bright. The steps are simple, so kids can easily help put these together. And the result is so delicious 8 cookie sandwiches will be gone in a flash!

Lemon Cream Cheese Cookie Sandwiches

Makes 8 cookie sandwiches

  • 1 16.5-ounce package Pillsbury Sugar Cookies
  • 2 ounces cream cheese, softened to room temperature
  • 3 tablespoons butter, softened to room temperature
  • 2 teaspoons lemon juice
  • ¼ teaspoon vanilla extract
  • 1 1/8 cup powdered sugar

Preheat oven to 350°F.

Cut dough into ¼-inch slices (making 16 cookies) and place 2 inches apart on ungreased cookie sheet. Bake for 10-12 minutes, or until edges are light brown. Let cool on cookie sheet for 2 minutes then transfer to a cooling rack.

Using a hand mixer, blend cream cheese, butter, lemon juice, vanilla extract and powdered sugar well, 1-2 minutes.

Spread 1 heaping tablespoon of frosting onto each of 8 cookies. You should use all of the frosting between 8 cookies. Place a second cookie on top to form the sandwich. Enjoy!

To store, keep in an airtight container in the refrigerator.
