I’ve been on a bit of a kick with this baking with diet soda thing. I know it is still no substitute for eating healthy, but at least it is a step in the right direction. Cream soda is my favorite soda flavor and I usually buy it once in a while as a treat. Since I love the smooth creamy flavor I thought it might pair well with some basic yellow cupcakes. To stick with the same method I used for the bundt cake I added diet cream soda to the batter in lieu of the oil, water and eggs. They didn’t rise quite like regular cupcakes do so I filled the muffin tins to the top and it worked out beautifully. The finished result was a batch of creamy yellow cupcakes that were a little chewier and denser than their fattier counterparts. I did go ahead and top them with regular buttercream frosting, but that didn’t worry me too much. These are still cupcakes after all!
Diet Cream Soda Cupcakes
1 box yellow vanilla cake mix (the kind that makes 24 cupcakes)
1 12 ounce serving of diet cream soda
1 batch perfect vanilla buttercream
1. Add the cake mix and diet soda to a bowl and mix well. Line muffin tin with paper liners or cooking spray and fill each tin 3/4 full with the batter. Bake according to box directions.
2. Allow the cupcakes to cool completely before frosting according to directions.
