This very light and flavorful chicken is ideal for a warm summer dinner on your deck of patio. It’s very simple to prepare with just a few key ingredients and is packed with flavor from the marinade. You’ll make this over and over again! Serve with a fresh tossed green salad or roasted potatoes.
- 1 chicken, cut up (3-3.5 lbs)
You’ll need two batches of marinade so double quantities of ingredients below:
- 1/2 cup lemon juice (from 3 lemons)
- 1/4 cup olive oil
- 1 tsp crushed red pepper flakes
- 1 tsp white pepper
- 1 tsp salt
Combine and whisk marinade ingredients for one batch. Pour over chicken. Marinade for 3-4 hours turning over 20-30 minutes (or as you can.)
Before cooking, discard original marinade. Make another fresh batch of marinade using the remaining ingredients. Season chicken with salt and pepper.
Place in a pre-heated oven at 400 degrees. After about 10 minutes spoon freshly made marinade over the chicken and continue to baste with additional marinade every 20 minutes. Chicken will be done in about an hour.
