Mark Bittman’s approach to eating a mostly vegetarian diet as a way to stay healthy is outlined in his amazing book Food Matters. I own Food Matters and always strive to live by a lot of his guidelines. When I received Bon Appetit last month I was thrilled to see an entire article written by Mark containing recipes for healthy meals that were mainly vegetarian in nature. With the dark days of winter upon us I immediately gravitated toward this delicious Tropical Fruit Salad. It contains three of my favorite fruits and a healthy dose of maple syrup. The perfect flavors to perk me up on a cold winter morning. Best of all, it couldn’t be simpler to make and was absolutely delicious to eat. Mark Bittman’s Easy Tropical Fruit Salad
adapted from Bon Appetit
1 cup diced peeled mango
1 cup diced peeled cored pineapple
1 cup diced peeled banana
2 tablespoons pure maple syrup
1. Mix all ingredients in a bowl and serve!
