This zesty lime dressing will make any salad sing – especially the fiesta kind! Drizzle this Lime Agave Salad Dressing over-top spinach, black beans, tomatoes, corn, avocado, olives, tortilla crisps, sauteed plantains and more Mex-themed ingredients – now that’s a healthy dinner to crave!

Homemade Dressing Tips. The trick to a great homemade dressing is combining a bright acid with warmer flavors. Warm/rich flavors are usually fats – like oils or something creamy. You can use olive oil – or another fave oil like canola, grape seed or macadamia. Or you can use a creamy base like mayo, tahini or even mustard. Then you want to compliment that warm base with an acid.

I love lime (like for this lime dressing recipe below) or lemon. Apple cider vinegar and balsamic vinegar are also fabulous. Red or champagne vinegars as well. You can even do orange or pineapple for a fruity acid accent in your dressing. Get creative! And always whisk well!!..

Zesty Lime Agave Dressing
vegan, makes about 1 cup dressing

2 juicy limes, squeezed
1/2 tsp lime zest
1 Tbsp agave syrup
3 Tbsp extra virgin olive oil
1 Tbsp Apple Cider Vinegar
1/4 cup cilantro, finely chopped
1/4 tsp chipotle powder
black pepper

Directions:

1. Chop your cilantro – very fine.

2. Whisk all your liquid ingredients together – add int he dry spices – continue to whisk well.

3. Stir in the cilantro.

4. If you’d like – you can even blend this dressing for a few seconds for puree the cilantro into the liquid. Your call.

5. Add to a delicious fiesta salad like this one.
