Linguine with Homemade Cheese Sauce


I rarely, if ever, prepare a separate meal for my children. That being said, Panang curry is not often on the menu. I try to come up with simple recipes that will satisfy all of us and that I can easily finish with an adult twist . I love making this homemade cheese sauce that can be mixed with any shape pasta. It’s almost as simple as opening a box and far more delicious and nutritious. I also sneak in an egg or two to boost protein.

1 box pasta, any kind, cooked slightly al dente
1 cup grated hard cheese (being a Vermont girl I’m partial to extra sharp Cabot Cheddar)
1 egg
2 T butter
1/4 cup half and half
salt and pepper to taste
fresh basil
Bacon, cut in small pieces and crisped in a pan over medium heat, remove and drain on a paper towel to absorb extra fat.

Heat butter and half and half in a small pan on low heat, stir in cheese and allow to melt, turn off heat and crack egg into mixture and stir. Mix sauce with pasta and serve children portions. Serve adult portions and finish with finely cut basil, bacon and salt and pepper.
