Forget gold! Here is your mealtime pot of “green” at the end of the day this spring. Turn an ordinary pasta night into “lucky” pesto pasta night. This fun shamrock shaped pasta is your ticket away from March dinnertime madness. You can make a nice big batch of this stuff and serve it for a few nights – adding in different veggies, healthy beans – even some melty vegan Mozzarella cheese over top.

Shamrock Pasta. I found this fun pasta at Cost Plus World market. And you can even purchase it online for only $2.99. The green shamrocks are colored with spinach and have a mild flavor. Super yummy paired with pesto.

If you can’t find this shamrock pasta – you can always use another shape of “green” colored pasta.

I even added some vegan Daiya cheese for an extra yummy accent.

The perfect dessert to this meal? A shamrock shake (vegan) of course!

Lucky Shamrock Pesto Pasta

cooked shamrock pasta (or another green colored spinach pasta)
1 batch vegan pesto sauce

optional: Daiya vegan cheese
optional: nutritional yeast and a few dollops of Vegenaise (to taste)

Cook pasta.
Toss with pesto.
Add cheese and bake in oven for ten minutes at 350 degrees.
Keep in warm oven until ready to be served.

    I made this tonight
    - minus the clover pasta
    - minus the Daiya vegan cheese
    -minus the nutritional yeast and a few dollops of Vegenaise

    All I did was
    1. boil a pound of tri color rotini.
    2. heat up the pesto (i didn’t have the time to make from scratch,, so i just picked up pesto at the grocery store in the cheese section
    3. Made grilled chicken slices
    4. and mixed everything together and added some mozzarella cheese on the top.

    Fast, easy, and delicious

    Seems Cost Plus is out of the shamrock pasta but I found some at The Pasta Shoppe for about $5.99.
