Macaroon Ice Cream Sandwiches

It will probably come as no surprise to you that I am making lots of ice cream sandwiches with all of the homemade ice cream I’ve been churning up. One of our favorite desserts to enjoy is ice cream sandwiches and I’ll be telling you about our favorite grown-up versions next week. The first one I want to tell you about are these cute macaroon ice cream sandwiches. I made them with some delicious macaroons from our local bakery. It was as simple as opening them up and sandwiching them with some of our favorite homemade ice cream. The results were these cool ice cream bites that were sophisticated and fun all in one!

Macaroon Ice Cream Sandwiches

Macaroons

Ice Cream of choice, slightly softened

Open the macaroon and scrape the filling so that it is on one side of the cookie. Add the softened ice cream. Top with a drizzle of chocolate sauce or caramel sauce. Close the ice cream sandwich with the top cookie. Enjoy!
