These are such simple and elegant treats. A traditional French madeleine cookie is crumbled with melted butter and almond paste and pressed into a pan, topped with your favorite homemade jam, a bit more crumble and baked. In no time you have a delicious treat, and one that is all natural and fun to eat, too.
These jam bars and perfect to whip up in a flash and have a dessert ready for last-minute guests or a tray of cookies to bring for a potluck. Use your favorite summer jam to switch up the flavor endlessly.
Madeleine Jam Bars
15 madeleine cookies
2 ounces almond paste
3 tablespoons melted butter
2 cups jam (I used my peach raspberry wine jam)
Preheat oven to 375 degrees F. In a food processor or blender combine cookies, almond paste and melted butter. Pulse until combine and crumbly. Press 3/4 of the crumble mixture into an 8″ square pan. Spread jam over the cookie mixture. Sprinkle the remaining almond mixture over the jam as evenly as possible.
Bake bars at 375 degrees F for 35-40 minutes until jam is bubbly and crumb topping is starting to turn golden brown. Remove from oven, cool, cut into bars and serve.
Makes 16 bars.
