Dinner time is approaching and you are all out of ideas to make a healthy meal taste fabulous. Well no matter what your dinner time plan – easy pasta, pizza or veggie burgers – a healthy salad is a welcome addition (or feature!) to your meal. And this Super Avocado Dressing will make just about any bowl of greens or veggies amazing in a flash. Creamy with a hint of salty and sweet undertones from tamari and maple, and lots of zesty-sweet citrus. You can even drizzle this dressing over top tacos, rice, quinoa and more! But I love it best as a go-to salad dressing. Really, just pour some easy bagged salad in a large bowl – or pull a bunch of fresh greens from your veggie drawer and toss them with this dressing or drizzle over the top in a pretty swirl. Super Avocado Dressing
makes about 1 1/2 cups
1 large avocado
1 Tbsp tahini
2 tsp tamari or soy sauce
1/2 cup fresh squeezed orange juice
2 tsp maple syrup (or agave)
2-3 tsp oil .. try walnut, EVOO, grape seed .. something rich in “good fats”
black pepper to tastes – at least a few generous dashes
optional add-in ingredients:
1/2 cup cilantro or parsley
1 small jalapeno, stem removed (if you don’t like spicy – scrape away the seeds)
1 lime, squeezed
1. Add all ingredients to a blender or food processor – blend until creamy.
Serve right away or pour in dish and cover with lemon slices to prevent browning.
