The other day my daughter came home and asked for the cake with the spots in it. I knew she was asking for funfetti cake because she had had it at a friends birthday party the week prior. All I had was a box of organic yellow cake mix in the pantry and didn’t want to schlep all the way to the huge grocery store far away for the funfetti mix. So, I went to the 7-eleven the next block over and decided to make my own funfetti instead. At the shop I selected a nice big box of fruity pebbles, added them to the mix and, voila, homemade funfetti was born! It was so simple I am almost embarrassed that I almost bought the actual branded mix to begin with. It is so easy to make your own and I would much rather use organic cake mix anyway!
Easy Funfetti Cake
1 box organic yellow or white cake mix
1 1/2 cups Fruity Pebbles
1. Prepare the batter according to package directions and stir in the fruity pebbles at the last minute. Bake the cake according to directions and serve with a healthy swipe of frosting!
