It took me several years to find an amazing malted milk powder and when I finally did, the bag came with this recipe on it. I love malted milk. The flavor reminds me of my youth when I always asked for it to be added to my milkshakes at the ice cream parlor. Adding the powder to blondies seemed like a swell idea. It would be like a malted vanilla milkshake, only in bar form! Thanks to the geniuses at King Arthur Flour, the malted milk blondies did not disappoint. They were rich, dense and gooey with undertones of malted milk. It was like eating a Malted Milk Ball, only shaped like a brownie. Try these for a sweet winter treat. You’ll be in malted milk heaven.
Malted Milk Chocolate Chunk Blondies
adapted from King Arthur Flour
3/4 cup malted milk powder
1 cup firmly packed light brown sugar
1 1/2 cups all-purpose flour
1/4 teaspoon Kosher salt
1/2 teaspoon baking powder
3 large eggs
2 teaspoons vanilla
1/2 cup vegetable oil
1 cup semisweet chocolate chunks
1. Preheat oven to 350ºF. Lightly butter a 9×9 baking dish and set aside.
2. In a mixing bowl add the malted milk powder, sugar, flour, salt and baking powder. In a separate bowl beat together the eggs, vanilla and vegetable oil.
3. Add the flour mixture to the egg mixture and stir to combine. Then mix in the chocolate chunks.
4. Spread the batter into the prepared baking dish and bake for 25 to 30 minutes, or until a cake test inserted comes out clean.
