Growing up every summer my mom would make her famous potato salad. My plate would be 3/4 potato salad, 1/4 whatever else and by the end of the meal my plate was licked clean. Mom would make a ton too so I could eat it for days. It’s so good I would wake up on a hot morning and eat a cold bowl for breakfast. Now that I’m a mom and I live far away, I make this myself every summer, and my summer started last weekend with some ribs and this potato salad. It was a huge hit with all the guests; everyone kept coming back for more…until I hid the rest in the back of the fridge for breakfast. Mama’s Tater Salad Recipe

About 3 cups 1 inch cubed red potatoes

1/4 cup chopped onion

1/4 cup chopped celery

1/2 dill pickle finely chopped

1/3 cup light mayo

2 tablespoon spicy brown mustard

1/2 teaspoon garlic powder

1 teaspoon dill

salt and pepper to taste

Boil the cubed potatoes for about 15 minutes, to check for doneness poke with a fork and cooked potatoes will be soft. Drain and cool completely (for quick cooling place in an ice bath). In a separate bowl combine all the other ingredients, pour in the potatoes and gently toss (add more mayo if it seems dry). Refrigerate until cold or serve immediately. Makes about 6 servings.
