This Mango Avocado Superfood Quinoa is a beautiful dish to place on your table. Yesterday I whipped up a superfood vegan tacos night for dinner. And today it was all about the leftovers. I combined my leftover Mango Guacamole with quinoa to make this colorful, flavorful, antioxidant-filled dish. Everything about this quinoa makes me smile. The bright colors. The zesty-sweet flavors. And the wellness superfoods imbedded in each tasty bite. Grab this recipe!..
