Who doesn’t love a margarita now and then? I certainly do. But, it isn’t too appropriate for me to be drinking them all day long. Instead, I focus on eating them as well. I love margarita ice cream, cheesecake, and all kinds of goodies like that. When I was baking the other day I thought I would give my favorite sugar cookies a margarita feel. These tasty treats were just the thing to give me that fix mid-day!
¼ cup granulated sugar
¼ cup light brown sugar
Zest of 2 large limes
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon kosher salt
1 stick unsalted butter, softened
1 teaspoon vanilla extract
1. Preheat the oven to 375 degrees F. Pinch together the sugars and lime zest and set aside.
2. Sift together the flour, baking soda, and salt, and set aside.
3. In a stand mixer beat together the butter, lime sugars, and vanilla until light and fluffy Then, add in the flour mixture bit by bit until just combined.
4. Drop the cookies onto a prepared baking sheet in rounded 1 ½-inch balls and leave 2-inches between each one. Bake for about 15 minutes, or until they are lightly browned around the edges. Cool on a wire rack and enjoy!
