Leave it to Nigella to come up with the perfect ice cream for Cinco de Mayo. I mean, really, that woman can do anything. I have made this once it is just as delightful as you might think. Lime, tequila, and festive all in one bite! I was thinking it might taste amazing serving fried like a lot of Mexican desserts, but I can’t be sure. I have never fried ice cream at home and I don’t intend to try! Here is how you can make this awesome festive dessert for Sunday!
Margarita Ice Cream

1/2 cup lime juice
2 tablespoons tequila
3 tablespoons orange liquor
1 1/4 cups confectioners’ sugar
2 cups heavy cream
Place the first four ingredients into a bowl and stir until the sugar dissolves. Then, add in the cream and whip the mixture into soft peaks. Smooth out the top of the mixture and freeze it in a bowl for at least 8 hours. Then, enjoy immediately!
