This is my favorite summer salad. It’s the perfect side dish for summer barbecues and potlucks. My mom use to make this every year. We always had a large garden full of fresh cucumbers, and this was always our favorite way to enjoy them. This salad is so simple, and can be easily dressed up by adding more herbs and spices, or simplifying it. When my dad used to make it, when mom was at work, he just used cucumbers, salt, pepper and white vinegar. My mom had to add a fresh tomato and onion when she got home. For me, I had to add some feta, because nothing makes it “betta” than feta.
More ideas for things you can add are pickling spices, fresh herbs like dill, and other crunchy veggies. I’ve even added lots of different crunchy vegetables like carrots and celery, although i think my favorite was sliced radishes. The radishes make this spicy and delicious.
Marinated Cucumber Salad
2 large cucumbers, sliced thin
1 large tomato, sliced thin
1 red onion, sliced thin
3 cups white vinegar ( or for a less acidic salad – 1 1/2 cups white vinegar and 1 1/2 cups water)
3 tablespoons sugar
2 teaspoons salt
lots of fresh cracked pepper
feta cheese to garnish
1. Thinly slice all vegetables and add all other ingredients except cheese in a large bowl. Cover and refrigerate over night
2. Serve garnished with feta cheese.
