Marvelous Meyer Lemon Pancakes

Meyer lemons are a beautiful cross between a mandarin and a lemon. I always look forward to Meyer Lemon season and use them in as many ways as I possibly can. Including adding their juice and zest to pancakes! It adds a wonderful bright citrus flavor and a little zing to breakfast. 1 lemon goes a long way. I like to dust my pancakes with powdered sugar and then squeeze a little extra juice on top. The lemon juice mixes with the sugar snow and creates a gorgeous glaze. Simply delicious. Grab a Meyer lemon and follow the jump for the recipe.
