Marvelous Meyer Lemon Pancakes
Meyer lemons are a beautiful cross between a mandarin and a lemon. I always look forward to Meyer Lemon season and use them in as many ways as I possibly can. Including adding their juice and zest to pancakes! It adds a wonderful bright citrus flavor and a little zing to breakfast. 1 lemon goes a long way. I like to dust my pancakes with powdered sugar and then squeeze a little extra juice on top. The lemon juice mixes with the sugar snow and creates a gorgeous glaze. Simply delicious. Meyer Lemon Pancakes
What you’ll need:
2 cups Bisquick pancake mix
1 cup milk
2 eggs
1 tablespoon sugar
1 Meyer lemon – zested, juiced
powdered sugar to dust
What to do:
1. Into a bowl add: pancake mix, milk, eggs, sugar, lemon juice. Mix to combine.
2. Pour 1/4 cup of batter onto hot griddle. Cook until edges are dry. Flip. Continue cooking until golden.
3. Garnish with lemon zest and powdered sugar.
